Fast depends not only on how much traffic you’re getting on your site, and what types of files you’re serving, but also whether or not you’re running a dynamic application that gets its data from a database. That can seriously slow things down if the web server and the database server are on different machines, as they are on some web hosts (GoDaddy for example).
So far, I’ve found HostGator to be pretty responsive. Of course it also depends on your LEVEL of hosting. For example, if you’re on a shared host, how many other sites are sitting on the same server? If any of THEM is getting a lot of traffic, then your site will be slow too. The only way around that is to get a dedicated host, and possibly defray the cost a little by sharing it with one or two other websites who you know and trust.
